Bianco del Comandante

Grape variety: Malvasia delle Lipari 100%

Harvested by hand. One half macerates on the skins for 24 hours, and is pressed (gentle press) with the other half harvested the following day. Spontaneous fermentation, aged on fine lees in steel vats for 8 months, 3 months in bottle. Low sulphite content, 30/40 mg/hl.

Colour: Straw yellow.

Ideal for starters, all seafood dishes, white and pink meats, lightly spiced dishes (chicken curry), ratatouille, goat's cheeses.

Serving: 11/13 C°. Vol: 13%Alc.

Palate: full-bodied, balanced by sapidity and minerality, long on the palate, fresh.

Bouquet: orange blossom, medlar, citrus fruit, hints of pineapple.

ORANGE

Grape varieties : Malvasia 20%, cattarato 80%.

Aged in Italian terracotta amphora. Orange wine. Harvested by hand. Spontaneous fermentation on indigenous yeasts. Maceration on skins for 25 days at constant temperature. Pressed then aged in amphora for 12 months, 8 months in bottle. Very little sulphites (20/30 mg/hl).

Bouquet: Yuzu, sage, broom.

Ideal with fatty, tasty products: fatty fish such as monkfish or St Pierre; pasta with bottarga, very mature cheeses (Munster); cheese-based desserts (cheesecakes, pannacotta).

A wine for meditation. Serve at 15°C. Do not shake the bottle. Allow to settle if decanted. Vol: 12,5%Alc.

Colour: amber yellow (Orange wine).

Palate: Structured and fresh, ripe apricot, mango, pink grapefruit, tannins.

IDDI

Grape varieties : Malvasia 80%, cattarato 20%.

Aged in Italian terracotta amphora. Orange wine. Harvested by hand. Spontaneous fermentation on indigenous yeasts. Maceration on skins for 25 days at constant temperature. Pressed then aged in amphora for 12 months, 8 months in bottle. Very little sulphites (20/30 mg/hl).

Bouquet: pink grapefruit, rosemary, frangipani blossom.

Ideal with fatty, tasty products: fatty fish such as monkfish or St Pierre; pasta with bottarga, very mature cheeses (Munster); cheese-based desserts (cheesecakes, pannacotta).

Palate: structured and fresh, complexity, ripe apricot, passion fruit, citrus fruit, supported by elegant tannins.

Il Rosso

Grape varieties : Nerello Cappuccio 40%, Nero Mascalese 40%, Corinto Nero 20%.

Harvested by hand. Maceration for 6 days without temperature control, half of which with whole bunches. Spontaneous fermentation using indigenous yeasts. Aged on fine lees for 6/8 months in steel vats, 3 months in bottle. Low sulphite content (20/30 mg/hl).

Bouquet: Forest fruit, cherry, floral notes.

Colour: intense purple. Appreciable deposit possible.

Palate: Structured, combining freshness and body, red berries, blueberries and noble tannins.

Ideal as an aperitif, with white and pink meats, fish for connoisseurs, goat's cheese and chocolate desserts.

Serve at room temperature, cool in summer. Vol: 13%Alc.

IDDI Rosso

Grape varieties : Nerello Cappuccio 40%, Nerello Mascalese 40%, Corinto Nero 20%.

Matured in amphora. Harvested by hand. Destemming and maceration in open terracotta amphora, with some whole bunches (of Nerello Mascalese), with gradual punching down of the cap. Spontaneous fermentation with indigenous yeasts. Maceration without temperature control for six days. Aged on fine lees in amphora for 12 months; 8 months in bottle. Very little sulphite (20/30 mg/hl).

Bouquet : berries, pomegranate, spicy notes.

Ideal with meats, sauces and stews, cheeses and chocolate desserts.

Serving temperature: 16-18C°. Vol: 13% Alc.

Colour: dense ruby red.

Palate: elegant structure, full-bodied and fresh, with notes of red fruit, blueberry and noble tannins.

Malvasia delle Lipari DOC Passito

Grape varieties : Malvasia 95%, Corinto Nero 5%.

Harvested by hand. The bunches of grapes, laid out on canis, are exposed to the sun every day and put under cover every night for 2 to 3 weeks. The grapes are then gently pressed without destemming. Aged on fine lees in steel vats for 12 to 24 months, with 3 months in bottle.

Bouquet: Honey, dates.

Ideal as an aperitif, and with foie gras, desserts and dry cakes, dishes and desserts with sesame. It is the wine of prestige, for the end of festive meals and ceremonies in Sicily as in all Italy.

Serving: 12/15 C°. Vol: 15%Alc.

Colour: Amber yellow.

Palate: Dried fruit, ripe apricot, rosemary. Soft and coating, flower honey.
